One Day Classes:

Would you like to concentrate your epicurean experience in one day? Book a one day class. Chef
Giuseppe offers a personalized program at your site of stay or at the chef's kitchen, in Nievole outside
of the city of Lucca. One-day classes are offered on request from March thru December, based on
availability. (During the months of January and February, Chef Giuseppe will be teaching Tuscan
cooking at US schools.)

Students work side by side with Giuseppe in a professionally equipped kitchen with traditional Tuscan atmosphere, enhanced with wood-burning pizza oven and over-sized fireplace. The One Day Program begins as Chef Giuseppe takes you on a visit to the Farmer's market, a pastiche of vibrant colours that provides the setting from which to choose fresh vegetables and herbs, then it continues to other produce, dairy and butchers shops. With shopping done, Giuseppe leads you back to the kitchen for the hands-on preparation of a fantasic Tuscan meal. (See example of classes)

Each participant in the class will receive a gift apron and recipes. The dishes become a meal at the end
of the class, paired with appropriate wines.

If you prefer, you can have your one day class cover a specific subject or region of Tuscan cooking.

Tastes From a Tuscan Island
The island of Gorgona 30 miles off of the Livorno coast, is the inspiration for this sea-food themed
class. Gorgona was Giuseppe's summer  residence for many years. 

Examples of dishes you’ll study:
• Seafood "Crostini" with clams
• Stuffed calamari with crab in a light spicy sauce
• Linguine with rock fish and bottarga
• Sea bass fillet with capers, grape tomatoes and basil
• Fresh lemon and orange tart

A Taste of Maremma (Southern of Tuscany)
Maremma is a place of great culinary traditions. Ever since the Etruscans, it has been a wild land
of marshes and vast woodlands abundant with game: roe deer, hare, pheasant, wild boar. Many of
the courses recipes are based on the game hunted there.

Examples of dishes you’ll study:
• Hand-made pasta with duck ragout
• Stuffed Guinea hen breast with mushrooms and sautéed artichokes
• Polenta with wild boar stew
• Sponge cake with Ricotta and orange/lemon liqueur
